•  Italian Chef de Cuisine gives menu a flavourful twist

 
Inspired by Kempinski Hotel Ajman’s lush landscape, combined with the influence of his deep Italian roots, Chef Marco Pittalis creates a fascinating new menu for Sabella’s that is packed with exciting dishes, certain to delight the palate with intriguing flavours and fill the air with irresistible aromas.
 
Drawing on 15 years of culinary experience, Chef Marco captures an eclectic mix of tantalising tastes from different cities and cultures and blends them brilliantly into his creations, treating diners to savoury surprises as traditional Italian favourites are given a flavourful new twist.
 
As a result, a simple trip to Kempinski Hotel Ajman’s popular Italian restaurant, Sabella’s, becomes an exhilarating journey through Italy’s famed culinary delights. For seafood lovers, Chef Marco creates a simmering sensation with Fillet of Cod, a simple dish of the freshest cod fish lightly pan–fried with a sprinkling of condiments to enhance the flavours. Thereafter, the intrepid chef whips up a light saffron mayonnaise that superbly compliments the succulent fish. Confit cherry tomatoes and fresh rocket salad complete the embellishment to this simple, yet exquisite masterpiece.
 
A feast awaits meat lovers in Agnello Scottadito, which showcases lamb cutlets, lightly floured for added texture and fried in olive oil, then served with white wine and rosemary sauce, for a sumptuous meal diners are unlikely to forget.
